Course Description This course will introduce the basic concepts of one-carbon metabolism (OCM) and the functions of vitamin coenzymes involved in the main reactions I our body. The goal of the course is to introduce the nutritional biochemistry in OCM in detail to students who are conducting research in related fields, and to deeply explore the latest research on OCM in recent years. It includes the main vitamin cofactors of enzymes in OCM, cellular absorption, vitamin uptake and retention, assimilation and dissimilation of folic acid, folic acid antagonists, regulation of folate dependent transmethylation, transsulfuration and homocysteine remethylation, genetic variability and dietary effects on OCM, cellular and genetic patterns on metabolic kinetics in human diseases and therapies

介紹單碳代謝基本概念以及參與其中主要反應之維生素輔酶之功能。課程之目標為對進行相關領域研究之同學詳盡介紹單碳代謝中之營養生化、並深入探討近年來生素與單碳代謝的最新研究。將包括單碳代謝中之酵素的維生素輔因子、細胞對於葉酸的吸收、滯留、同化及異化作用、葉酸拮抗藥物、轉甲基、轉硫與同半胱胺酸再甲基作用之調控、基因的變異性與飲食對單碳代謝的影響、細胞模式與遺傳性老鼠的模式、單碳代謝與疾病。
