Course Description This course covers the postharvest process in fruit production from harvest to consumer, focusing on postharvest physiological changes and the corresponding handling techniques. It includes a introduction of different managements for various fruit crops based on their characteristics, such as temperate, subtropical, and tropical fruits. The course also explores current trends in post-harvest handling technologies both domestically and internationally, and discusses potential future directions for the Taiwanese industry.本課程介紹以水果為主之園產品自採收到消費者之間過程，其採後生理上的變化及因應的處理技術原則；並依作物特性（溫帶、亞熱帶及熱帶水果等)深入討論各作物之採後處理原則；介紹國內外採後處理技術之趨勢，並討論未來臺灣產業可前進的方向。
