本課程為微生物的應用課程。課程目標是使學生孰悉微生物的基本操作技能,學習精釀啤酒的釀造製程。每學期由授課老師教授釀酒的原理及其材料的使用,並親自釀製精釀啤酒。由於本課程強調實作,可以使學生能夠具備啤酒的操作與經驗,對於學生未來有志於釀酒事業的工作具有相當的助益。
This course is an application of using microorganism. The main objective of this course is to have students to learn how to brew the craft beer. The students are not only learning the basic theory about the brewing but also acquainting the processes of brewing. Since this course is emphasizing the practical learning, the students could have experience on beer brewing. These experiences will be bringing the students to fit in the needs in beer brewing industry for the future career.
