課程簡述 (中)
本課程主題為介紹脂質生物技術，並將其細分四大部分來進行討論。(1) Oilseed Quality Improvement. (2) Oxylipins: Formation, Potential Uses, and Their Role in Defense. (3) Lipases and Food Nutrition. (4) Biocatalysts in Nonfood Applications.

(Eng.) The lesson topics we are going to introduce the biotechnology concerning lipids, which is divided into four major sections to discuss, including, (i) Oilseed Quality Improvement. (2) Oxylipins: Formation, Potential Uses, and Their Role in Defense. (3) Lipases and Food Nutrition. (4) Biocatalysts in Nonfood Applications.

 (1) Lipase: structure, function, and properties
 (2) Industrial uses of lipase
 (3) Enzymatic synthesis of structured lipids
4. Biocatalysts in Nonfood Applications
 (1) Lipase-catalyzed synthesis of value-added fatty acid esters
 (2) Microbiological conversions of fatty acids to value-added products
 (3) Enzyme reactions in supercritical fluids
