Course Description 內容主要涵蓋農藥毒素,化學毒素,食品加工毒物,有毒食品添加物,細菌性及黴菌性食物毒素,食品環境毒物...等等特性與疾病相關之介紹,另外針對毒物之毒理機制及安全性評估等內容,並安排實驗操作讓學生真正了解食品毒物之實際作用與評估方式,讓選課學生能有通盤之認識.

生活環境中越來越多的毒物造成人體相關的疾病發生,包括癌症.畸胎.中毒.突變.免疫力降低..等等,如何預防及了解各種毒物之相關特性及其致毒機制實為一重要課題,本課程之目的即以日常生活中所接觸到之毒物進行介紹讓選課學生能有基本認識,將所得到之相關知識應用於生活中各種疾病的預防。
