課程簡述	(中文) 本基礎毒理學課程主要著重食品中可能危害物質對生物體作用之探討，包括研究對生物體之毒性作用機制。本課程將討論食品中潛在毒性物質暴露引起生物體內反應及危害之可能作用機制，並介紹新興食品安全性與功效性評估。 (English) This foundational toxicology course mainly focuses on the discussion of the effects of potentially hazardous substances in food on organisms, including the study of the mechanism of toxic effects on organisms. This course will discuss the possible mechanism of action of in vivo reactions and hazards caused by exposure to potentially toxic substances in food, and introduce emerging food safety and efficacy assessments.
